On Saturday I went up to Salt Lake to look for a coat rack. Apparently this is the wrong time of year for that. I stopped at Home Goods because I had seen coat racks a while ago in TJ Maxx and figured Home Goods would have a larger selection. Turns out they only had two and they were kids sized. But… I found this awesome cupcake rack! Naturally I had to make cupcakes to go on it. That ended up being a little bit of a nightmare due to some complications in making the frosting (the cake was from a box, great baking skills, I know…). I made the frosting twice. The first recipe did not turn out. The second did and I’ve included it below:

• 1 cup Butter
• 4 cups Powdered Sugar
• 1/4 teaspoon Salt
• 2 tablespoons Vanilla Extract

Combine all the ingredients and beat for 2-3 minutes. You can add a little milk to make the texture smoother (I forgot to do that so mine ended up being a little rough looking).
