Birthday BBQ

When I got home from my 2 hours of work yesterday I didn’t feel like making dinner. Probably because it was such a long day :). It always seems that on the days when I don’t do much I don’t want to do much more. Anyway, I decided I really should make dinner and boy am I glad I did! I decided I wanted to try more with my Wildtree Basil Pesto. Originally I thought we’d just do pasta (quick and easy) but then decided I would try making something a little more exciting instead. The main dish of our Prom dinner was really the highlight. I don’t know how many of you have tried the Wildtree Alfredo, but it is to die for! Stuffed Bell Peppers

One thing I have come to love in the last few years are bell peppers. We used to eat them all the time. It seemed like every recipe I used called for bell peppers. While we still eat them, it is usually only when we get them in our Bountiful Basket or if we are making another recipe (with other items from our basket) that calls for them. One of my favorite recipes (which I didn’t think I would like when I first saw it) is stuffed bell peppers. We got 3 red bell peppers in our basket this week and so I decided to stuff them. Normally we use green peppers because they have more flavor, but these were still really good. The recipe is really simple too. Plus I used the fresh tomatoes we got in our basket instead of canned tomatoes. I think that made them much better than usual. Since we didn’t have enough peppers to use all the filling we’re just going to eat the filling tomorrow for lunch because it is so delicious! I have to say I love it when we get my favorite fruits and vegetables in the basket. Not sure what we will be having tomorrow, but I’m sure it will be something good :)

Stuffed Bell Peppers

  • 6 Med Green Peppers
  • 1lb Ground Beef
  • 1/3 C Chopped Onion
  • Salt
  • Peppter
  • 15 oz. can Diced Tomatoes (I used 3 large fresh tomatoes)
  • 1 C water
  • 1/2 C Uncooked Rice
  • 2 tsp Worcestershire Sauce
  • 1 C Shredded Cheese

Clean peppers then precook in boiling salted water for about 5 min.

Brown ground beef with onion. Season with a little salt and pepper. Add diced tomatoes. Add water, uncooked rice, and Worcestershire Sauce. Cover and simmer about 15 minutes or until rice is tender. Stir in shredded cheese. Stuff peppers with filling. Bake at 350, uncovered for 20-25 min.

Creamy Tomato Sauce

This sauce is about as addicting as chocolate. Seriously. I can’t help tasting it off and on while it cooks. I’ve tried a few recipes from The Pioneer Woman but this is by far my favorite (at least up to this point).

So if you are looking for a deliciously sweet red sauce for pasta, this is the one to try. It’s pretty easy, doesn’t have any unusual ingredients (although I don’t usually have whipping cream stocked in my fridge). I love adding plenty of Parmesan cheese and a little bit of fresh parsley or basil for color. Delicious!

Balsamic Feta Chicken

This chicken is easy to make, but looks and tastes delicious. Let it soak and cook in a crock pot all day so it is nice and juicy then put it in the oven with some cheese and tomatoes and viola! A beautiful dinner!


Balsamic Feta Chicken

12-15 chicken tenders of 4 chicken breasts
1 cup balsamic vinaigrette dressing (I like to use Newman’s)
1 tsp Italian Seasoning
Grated parmesan cheese
Crumbled Feta cheese
*optional-diced tomatoes (canned or fresh)

Place chicken in a crock pot. Cover with balsamic vinaigrette dressing. Sprinkle with Italian seasoning. Cook on low 6-8 hours turning chicken occasionally. Carefully remove chicken (so it doesn’t fall apart) and place on a greased cookie sheet or baking dish. Sprinkle with grated parmesan cheese and feta cheese. Add tomatoes if desired. Broil for 5-10 minutes until cheese is melted and slightly toasted.

(You could also marinate the chicken and then grill it before putting it in the oven rather than cooking it in the crock pot)

Dave’s Amazing Omelets

While we were in Nevada Dave made omelets using fresh vegetables from their garden. We had these last year in Park City and I thought they couldn’t be better. I think these were. He always seems to get the perfect amount of onions, peppers, tomatoes, and cheese in a beautifully cooked egg. Seriously, breakfast (or in this case lunch) food can’t get much better. Shannon made delicious toast to go along with the omelets which was a great touch. The whole grain bread tasted great with a bite of omelet.

Taco Salad

I love taco salads. Anything from Taco Amigo to Cafe Rio to homemade. This is a homemade version I had for dinner last night. It was delicious! I have to say that you can’t have a taco salad without ranch. I prefer the lime/cilantro kind, but regular works nicely in this case…

Here’s the recipe I used for the filling (I’m not exactly sure where it came from, but I got it from my mom):

1 onion chopped

2 cups cooked hamburger

16 oz tomato sauce

16 oz kidney beans

1 T chili powder

1/2 tsp cumin

1/2 tsp garlic powder

Basically just heat and serve. I cooked the onions, then the hamburger, then added the rest. Served with chips, cheese, ranch and it should have had tomato but I didn’t have any…
